Banana Chocolate Chip Oatmeal Muffins

Makes about 12 Muffins

Ingredients:

  • 3 cups of oats (uncooked)
  • 2 tsp. Baking Powder
  • 4 egg whites
  • 1 1/4 cup non-fat milk
  • 3/4 cup mashed bananas (took me about 3 small bananas)
  • 1 tsp. Vanilla Extract
  • 3/4 cups of semi-sweet chocolate chips (I used a whole cup…I love chocolate!)
  • Honey for topping

Instructions:

1. Pre-heat oven to 375 degrees and generously spray cupcake/muffin tray with cooking spray (I wouldn’t use cupcake liners because it will be hard to remove them to eat muffins)

2. In a large mixing bowl combine oats, baking powder, milk, mashed bananas,  and vanilla extract

3. Then pour in egg whites and mix until thoroughly combined

4. Pour in chocolate chips and fold into mixture

5. Use table spoon or ice cream scoop and fill each muffin space 3/4 of the way full

6. Bake for 15 – 20 minutes. Remove muffins from tray and drizzle with honey!
