Sun Dried Tomato and Sausage Pasta Bake

Ingredients:

Whole Wheat Shell Pasta (or any pasta you prefer)

1/2 lb Beef Sausage

Handful of Fresh Sun dried Tomatoes

Jar of Sun dried Tomato Pasta Sauce

Cup of Spinach

1/2 a cup of red and green peppers (chopped)

Half small onion (chopped)

1 teaspoon of minced garlic

1 teaspoon of basil

salt and pepper to taste

1/3 cup of feta

1/2 cup of mozzarella cheese (for topping)

Directions:

Bring water to boil and then cook pasta until soft

In sauce pan lightly saute garlic and onions in extra virgin olive oil until lightly browned

Cook sausage until browned

Mix in spinach, red and green peppers with sausage, garlic, and onions and add basil, salt, and pepper

Pour in sundried tomato sauce and bring to a simmer then mix in fresh sundried tomatoes

Pour off boiling water and strain pasta noodles then mix with sauce mixture

Pour pasta and sauce into glass dish (or oven safe dish) then sprinkle the crumbled feta over pasta

Place in oven at 375 degrees and cook for 15 minutes then add slices of mozzarella cheese then cook until cheese melted

Serve pasta with a fresh garden salad and enjoy!
